The Benefits of Probiotics and My Gluten-Free Sourdough Starter Recipe

  • Whole grain gluten free starter: Cup4Cup Wholesome Flour (gluten free) Filtered Water
  • Silicone Spatula & Wooden Spoon (metal or stainless steel is not recommended because sourdough is made with acid and it reacts to the metal)
  • 1 quart straight sided glass jar
  • Clean breathable towel (tea towel)
  • Colored flat rubber band or tape
  • Measuring cups / food scale

Weigh your empty glass jar. You’ll refer back to this daily so make sure you write the number down first and have it near your prep area.

Day 1 – First Feed – In the clean and dry glass jar, add 50gr of gluten free flour and 50 gr. of room temperature filtered water. Mix together. The consistency should look like a thin paste that’s a bit thicker than pancake batter. Add a little extra water or flour if needed. Stir well with wooden spoon then use the spatula to scrape down the inside of the jar. Place the colored tape or elastic band at the height of the starter. Cover the jar loosely with a clean towel and set it on your counter in a warm spot away from direct sunlight for 24 hours.

Day 2 – Check to see whether any bubbles, which may look like small black dots have appeared on the surface. Bubbles indicate fermentation. The texture will be stretchy. Stir the starter with a wooden spoon. Add an additional 50 gr of gluten free flour and 50 gr of filtered water. Stir well. Use the spatula to scrape down the inside of the jar. Move elastic band or tape to the height of your starter. Cover, place back on counter.

Day 3 – Whether bubbles are visible or not, time to start the feeding process. Discard all but 100 grams of the starter. This is where your math comes in handy. Let’s say your jar was 730gr. when you stir and discard all but 100gr of starter, your food scale should now read approximately 830 grams. (730 gr + 100 gr starter) Now add an additional 50 gr of gluten free flour and 50 gr of filtered water, the weight of all would now be around 930 gr. Stir well with the wooden spoon. Use the spatula to scrape down the inside of the jar. The texture should resemble thick batter or plain yogurt at this point, so add more water if needed. Move the colored tape or elastic band to the height of your starter. Cover the jar loosely with a clean towel or plastic wrap and set the jar back on your counter top in a warm location for another 24 hours.

Days 4,5 & 6 – Repeat the feeding process outlined on Day 3. As the yeast begins to develop, your starter will rise, and bubbles will form on the surface and throughout the culture. When the starter falls, it’s time to feed it again. Repeat the feeding process as outlined on Day 3.

Day 7 – By now you should see plenty of bubbles, both large and small. The texture will be spongy and puffy, similar to roasted marshmellows. Take in the aroma. It should smell pleasant and not astringent. If these conditions are met, your starter is now active and ready to use.

Probiotics are essential for gut health. They promote a healthy balance of gut bacteria and are linked to a wide range of health benefits.

Probiotics are live bacteria and yeasts that provide numerous benefits to our intestinal flora. One delicious form of probiotics is sourdough.

Unlike baker’s yeast, sourdough starters turn sugar into carbonated gas and lactic acid, which gives the bread its distinctive sour flavor.

Sourdough starter is packed with microbial diversity, unlike commercial yeast.

Being Greek, one of my favorite things is enjoying fresh-baked bread, especially when dipped into a Greek salad with extra virgin olive oil… yum! 🥖🥗

However, due to Hashimoto’s Disease, gluten is not my friend.

For those with gluten sensitivities, I’ve been experimenting with gluten-free flours to make my own starter.

Finally, I found one that behaves like regular whole grain flour and makes great sourdough bread. Here’s my recipe for my gluten-free starter.

Special Tip: if your starter is not ready at this point, which is quite common, continue the feeding process for one to two weeks or more.

The very last step is to transfer your starter to a nice, clean jar. In keeping with tradition, you can also name it . My starter is called Baby Girl, after our RV.
